The smokehouse is located right on the edge of the sea and when it storms, as it often does in the north, the waves crash so high over the quayside that we sometimes say it is the salt from the sea spray that gives our smoked trout its unique, characteristic taste. We only use fresh, Norwegian rainbow trout of the highest quality, which is dry-salted and cold-smoked on chips of juniper and alder.
